We use real milk chocolate in our protein bars, because of this the likelihood of blooming when temperatures fluctuate is high. Chocolate blooming is most commonly caused by quick temperature changes.
There are two types of blooming: sugar and fat. Sugar blooming is caused by surface moisture which can change the appearance of the bars. Fat blooming involves the separation of fat which consequently deposits itself on the outside of the bar.
It is important to note that even though the bars may no longer be visually appealing, bloomed chocolate is still safe to eat. To prevent blooming, be sure to store protein bars in a dry, cool place away from direct sunlight in tightly sealed containers.
